Saturday James and I took part in a cheese-making class at the Dallas Mozzarella Company. It was a blast! We learned how to make ricotta and turned fresh curd into 3 different types of mozzerella. We had a cocktail tasting with a ton of delicious cheeses (all made by the DMC), took home 2lbs of ricotta, all the other cheese we made and also two little cute aprons! It was a lot of fun, educational and a great way to get to know more about our fun little city. Here are some pictures from the tour and the class. Don't worry, the only cheese we touched was the cheese that went home with us, so no need to worry about our grimmy hands touching your prized Deep Ellum Blue Cheese.
